Chun Mee-cha (eyebrow tea) gets its name from the curve of the
processed leaf. It was thought, when viewing the beautifully
shaped leaf, that it resembled that of a woman's finely formed
eyebrow. The pan-fried leaves produce a highly fragrant clear,
yellow-greenish brew with a distinctive sweet flavor.
Green tea is a hypotensive, lowering blood pressure and helping to increase blood flow to the heart. Many Asians have long consumed green tea with meals, and this practice is now showing to reduce arterial disease.[1] Green tea is steamed and does not lose its oxidation. Black tea and oolong tea are fermented and that allows water to evaporate which causes oxidation.[2] Green tea is 30-40% polyphenols by weight. Many of tea's positive immune system effects are related to the high levels of polyphenols it contains.[3]
Green tea is tea that has been dried out quickly to stop it from oxidizing
and turning black . The best green teas, like sencha , are steamed to break down the cell structure of the leaves and let the moisture out gently; cheaper green teas are dried by being heated in pans.[4] Green tea is particularly rich in health-promoting flavonoids (which account for 30% of the dry weight of a leaf), including catechins,
anti oxidants - and their derivatives. The most abundant catechin in green tea is epigallocatechin-3-gallate (EGCG), which is thought to play a pivotal role in the green tea's anticancer and antioxidant effects.[5] Green tea is said to treat neurodegenerative diseases, high cholesterol, arthritis, cancer, and even multiple sclerosis. It addition, it is
thought to aid in weight loss by raising metabolism and increasing fat metabolism.[6]
Green tea is also a good source of proteins, chlorophyll, lignin, and amino acids including theanine. On average sencha has 30% more catechin (antioxidants), more than 4 times as much vitamin C and 2.5 times more vitamin E.[10] Green tea is available in decaf. [11] Green Tea is one of the most powerful anti-oxidants found in nature. It is up to 10x more powerful than fruits and vegetables.[12]
Green tea is steamed before it's dried, which deactivates the enzyme that causes oxidation and locks in a high polyphenol content - 60 percent more than black tea. Oolong tea is dried (oxidized) some, but not completely, before it is steamed to stop the oxidation process.[13]
